Healthy Habits - Day 2

Energy levels are contagious. High and positive energy leads to collective productivity and mindfulness allows one to balance out the peaks and valleys in energy and positivity.

Day 2

Fitness
  • Morning: 3 Sets of 20 Sit-Ups w/ 3 Sets of 20 Push-Ups
  • Afternoon: 20 Push-Ups
  • Evening: 2 Sets of 20 Sit-Ups w/ 1 Set of 20 Push-Ups followed by 2min Plank
Mindfulness
  • Dawn5-Minute Meditation
  • Morning: Deep breaths, calm composure during challenging work meetings
  • Afternoon: Set-Up My Computer Outside -- Worked in the Fresh Air!
  • Evening: 5-Minute Meditation

  • Snack: Angie's Salted Caramel Kettle Corn

  • Dinner: Gluten Free Pasta with Broccoli and Chicken Sausage
Tomorrow, I commit myself to no caffeine, lots of water, and running my 5K on the treadmill. I commit myself to serenity, detachment, friendliness, and flexibility.

  1. Not that I've written up -- but I could give you a general idea. I have been exploring with gluten free options and have now cut out gluten entirely. Would you like recipes for the Paleo Egg Muffins and/or the GF Pasta Dish listed above?

    1. That would be great! I have been thinking about going gluten free as well but I think I like bread too much :)

    2. First of all -- you have to try a Grilled Cheese sandwich with Udis Bread --- once I'd done this and tasted the deliciousness of Udi's, toasted or not, I knew I could go Gluten Free. Rice noodles and gluten free noodles also work really well for your regular pasta dishes. I strongly encourage giving a good go of it even though I'm not far enough in to really notice much of a difference.

      Second of all -- as for recipes -- both Egg Muffins and Pasta dishes were really easy to make:

      EGG MUFFINS
      Turn oven to 350 degrees.
      You will need a greased 12-muffin pan. I hear the silicone muffin cups work better but I don't own them. I also heard you can bake these in a water bath but I just bake them in the oven -- no water.
      First, fry up (w/ a little olive oil) your favorite veggies or the ones in your fridge that need using up... I used:
      Onions, Spinach, Mushrooms, Bell Peppers. Heirloom Tomatoes
      Place 1-2 teaspoons of veggies in each tin.

      Mix up the following ingredients with a whisk and then pour evenly into the 12 muffin tins:
      9 Eggs & 1/2 Cup of Soy Milk mixed up -- don't add Soy Milk if you feel like the first batch is too airy/fluffy -- the soy milk (or milk or water) added makes the muffins more fluffy and less dense.
      1/2 Tsp of Baking Soda (this ingredient also makes them rise/fluffy)
      1/2 Tsp of flavoring -- Salt/Pepper/Garlic Pepper

      Bake in Oven at 325 -- keep checking on them -- I believe they took no longer than 20 minutes.

      PASTA DISH w/ CHICKEN SAUSAGE, MUSHROOMS, & BROCCOLI
      Boil up (w/ a dash of salt in water) Gluten Free Penne Pasta -- prepare as indicated on package
      Fry up (w/ a little olive oil) Onions, Mushrooms, Broccoli, Sliced Chicken Sausage w/ Garlic & Spinach from Trader Joes.
      When Pasta is done, rinse with boiling water and mix in Pesto for the 'sauce'/flavor.
      Serve with the fried veggies/sausage on top.
